Introduction

Ingredients

*Soy Beans Canned Organic, 1 can
*Raw White Onion chopped
*Clove of Garlic, 1 serving, minced
2 cups water
2 TBSP cooking oil (I prefer olive oil)
1 1/2 tsp curry powder
3/4 grated gingerroot
1/2 tsp salt
1/2 tsp ground cumin
1/4 tsp dry mustard
1 14 1/2 oz. can tomatoes, cut up
*cauliflower fresh, flowerets, 2 cup
1 tbsp snipped fresh cilantro
Directions
Drain beans. Combine beans, onion, garlic, water, & oil in a pressure cooker. Lock lid in place. Over high heat, bring cooker up to pressure. Reduce heat just enough to maintain pressure & pressure regulator rocks gently. Cook for 8 minutes.
Quick release the pressure & carefully remove lid. Drain beans. Return the beans to the pressure cooker.
Add cauliflower, curry powder, gingerrot, salt, cumin, mustard, & undrained tomatoes. Bring to boiling: reduce heat. Cover loosely (do not lock lid) & cook for 8-10 minutes or till cauliflower is tender. Stir in cilantro.
Serving Size: makes 4 main dish servings (4 1/2 cups)
