Introduction

I was VERY skeptical when I first tried this, but it has become one of my favorite low-carb breakfasts! I was VERY skeptical when I first tried this, but it has become one of my favorite low-carb breakfasts!
Number of Servings: 1

Ingredients

    2 eggs
    1 Tbsp cinnamon
    2 Tbsp Splenda
    splash of half and half
    splash of sugar free vanilla syrup/extract
    1oz Neufchatel or cream cheese

Tips

You can also top with sugar-free pancake syrup - but remember to add that to calorie count.


Directions

Preheat nonstick skillet to med-high heat.
Whisk together all ingredients in small bowl.
Spray skillet with non-stick cook spray and pour mixed ingredients into hot skillet.
Cook until firm then flip.
Add Neufchatel or cream cheese to center of "omelet" and reduce heat to med-low to allow cheese to melt.
Fold "omelet" in half and serve hot.
