Introduction

Delicious! I usually make my chili with ground beef or turkey, but I had too much pulled pork left over and decided to use it instead. I left out the chili powder in hopes that my son would it eat it but could easily be added for more flavor. Delicious! Ingredients

    6 cups cooked pulled pork
    2 cans red kidney beans
    2 28 oz cans of diced tomatoes
    1.5 cups frozen corn
    2 chipotle chilis in adobe, seeds removed
    cumin, to taste
    1 cup diced red onion
    1 can ro-tel tomatoes with green chiles
    3 TB EVOO
    salt and pepper to taste

Tips

Serve with sour cream and scallions on top, if desired.

The longer it simmers, the more the flavors blend.


Directions

Saute chopped onion over medium heat in oil until softened.
Add meat and warm through, stirring.
Add all other ingredients and cook over medium for 30 minutes, stirring occasionally, until hot.
Reduce heat to low and simmer for a while.
