    2 cups Potato Grated
    1 Cup Carrots Grated
    1 Cup Zucchini Grated
    1 Cup Sliced Mushrooms
    1.5 Cups Low fat Cheese Grated
    2 Green Onions
    1 Egg
    2 Egg Whites
    1 cup Bread Crumbs
    Tomato slices
    Pepper Slices


Mix All Ingredients into Bowl Except Tomato and Yellow Peppers, Save 1/2 cup of Cheese for Topping...Lightly Grease Pie Pan place ingredients in, top with this tomato and Pepper slices, sprikle Remaining cheese on top bake for 35-40 min @ 350 F. I used 2 small pie Shells and 1 Large to get 14 slices
