Ingredients

    1 Lb chicken breast, sliced thin
    1 1/2 cups diced onion
    1 cup diced red pepper
    2 cups instant brown rice
    1/4 cup lemon juice
    pepper to taste
    1 14 oz can low sodium fat free chicken broth
    1 14 oz can artichoke hearts
    2 Tbsp Parmesan cheese

Tips

Ok to use cooking spray instead of oil and omit Parmesan cheese.


Directions

Saute chicken in half of the olive oil, remove from pan. Saute onion and red pepper in remaining oil till translucent. place chicken broth and lemon juice in 2 quart sauce pan and bring to simmer. Add rice, chicken and onion and pepper mixture. Cover and turn heat down to low. Simmer 15 minutes. Add drained artichoke hearts and sprinkle with Parmesan cheese.
