Ingredients

8 oz Turkey breast meat diced
8 oz of Turkey leg/thigh meat diced
2 Medium Potatoes peeled and diced
3 Carrots peeled and diced
1 Medium Onion Diced
3 Stalks Celery diced
1 can Green Beans or 6 oz frozen Green Beans
1 cup Frozen Green Peas
1 cup Frozen yellow corn
1 Tbsp Unsalted Butter
4 cups Chicken Broth or Turkey stock
1/2 tsp Salt
1 tsp Black Pepper
1 1/2 tsp ground sage
6 tsp fresh Thyme
Tips
Serve Hot, makes 8 1 1/2 cup servings
Directions
1) Take meat off bone of you leftover Holiday Turkey. Use equal amounts of white and dark meat.
2) Peel and dice Potatoes
3) Peel and dice Carrots
4) Dice Celery
5) Dice Onion
6) In 5 Qt heavy bottom pot melt butter ,
7) Carrots, Onions and celery and cook over medium heat until tender and translucent.
8) Add remaining ingredients EXCEPT the Turkey and Noodles. Bring to boil then reduce heat and simmer 25 min.
9) Add Turkey and Noodles and let simmer for 30 minutes more.
Serving Size: Makes 8, 1 1/2 Cup servings
