Ingredients

    2 lbs chicken cut in bite sized pieces.
    2 tablespoons oil
    1 clove crushed garlic
    1 teaspoon crushed red pepper
    1/4 cup apple or orange juice (apple is traditional, I used orange)
    1/3 cup light brown sugar
    2 tablespoons ketchup
    1 tablespoon cider vinegar
    1/2 cup water
    1/3 cup soy sauce

Directions

Combine all but chicken and oil in pan and bring to a boil.
Stir fry chicken until lightly browned in the oil.

Divide the chicken evenly in jars and add sauce.
If you do not have enough sauce add juice or water to the fill line.

Pressure can for 75 minutes for 1000 foot and under altitude.

Serving Size: Makes 6 servings (2 per pint jar)
