Introduction

Number of Servings: 1

Ingredients

    1/4 cup Egg beaters or equivalent egg substitute
    3 medium mushrooms, sliced
    1/2 whole wheat pita
    1 Tbsp. Vegenaise (Vegan Mayo) or low-fat/fat-free mayo
    1/4 tsp. black pepper
    4 small tomato slices
    *if too bland add a dash of salt to the egg mixture

Tips

1/4 cup of the liquid egg can also be used depending on how much you want.


Directions

Cut a whole whole wheat pita in half and toast to your liking. Spray a glass container with cooking spray. Add liquid egg, mushrooms and pepper. Cook in microwave for 2 minutes. When pita cools add Vegenaise or low-fat/fat free mayo and sliced tomato. Dump the egg mixture into the pita. Eat up!!!
