Ingredients

    1 1/2 Cups blanched almond meal
    2 Tbsp coconut flour (desiccated coconut)
    1/4 Cup golden flaxseed meal
    1/4 tsp celtic sea salt
    1 1/2 tsps baking soda
    5 eggs
    1/4 Cup coconut oil
    1 Tbsp honey
    1 Tbsp apple cider vinegar

Tips

If loaf is uncooked in middle, sub 1 tsp baking powder, 1/2 tsp soda for the soda, lower oven temp to 325, cover with foil halfway through baking time and add from 10-20 minutes to original baking time.

Can substitute applesauce/stevia in place of honey.
Can substitute grapeseed oil, melted butter for coconut oil
Can double recipe and bake in large loaf pan (double bake time).


Directions

Place dry ingredients in food processor; pulse together Pulse in eggs, oil, honey and vinegar. Pour batter into a greased 7.5 x 3.5 Magic Line Loaf Pan. Bake at 350 for 30 minutes. Cool and serve.

Serving Size: Makes 1 small loaf - estimated 20 slices

    Good
    It tasted of too much baking soda so I checked the recipe Elana has on her website. Sure enough it calls for only 1/2t baking soda! I ended up with an uncooked center despite using a slightly larger pan than the recipe calls for. I will make this again to accommodate my oven as I think it has pot - 5/17/16
