Ingredients

    1 T olive oil
    1 T chopped fresh rosemary
    3 cloves garlic, chopped
    1/2 t black pepper
    1 (14.5-ounce) can cannellini beans
    2 T tahini
    juice of one lemon (about 3 T)

Tips

Skip the tahini and add 1/4 cup unsweetened almond milk instead of water, and these become a higher-protein swap for mashed potatoes.


Directions

Heat the oil in a small saute pan, then add the chopped rosemary, garlic, and pepper. Cook over medium heat, stirring often, until the garlic is golden brown. Add the beans, stirring to coat them in the rosemary-garlic oil.
Transfer the mixture to a food processor, add the tahini and lemon juice, then pulse to combine. Add water, one tablespoon at a time, until the hummus reaches the desired consistency.
Serve immediately or refrigerate for up to one week.
