Ingredients

Organic Yellow bell pepper, sliced
Organic Red bell pepper, sliced
Onion, chopped
Leek, chopped
Beef sausages, cut into rounds (marc-angelo brand)
Whole grain brown rice
Italian seasoning
Salt
Pepper
Garlic powder
Tomato sauce
Tips
-When covered, the tomatoes will melt into a sauce. If you would like to thicken up the sauce if it seems to watery just let it cook uncovered for a few minutes.
-The longer the meat, vegetables and italian seasoning get to cook the better it tastes. But do not over cook it, based of experience 20-30 minutes is good.
-The meat vegetable mixture can serve up to 4 people. I only used 2 servings of brown rice though as my boyfriend prefers pasta.
-Remember to taste throughout!
-Use different variations of meat and seasonings for your own tase.
Directions
Cut beef sausages into rounds and cook in a hot pan for about 4-5 minutes on each side.
While sausage is cooking, chop onions, leek and garlic if you have (I used powder since I didn't have any on hand).
Slice yellow and red bell peppers length wise. Chop tomatoes as well.
Drain excess fat from sausages. Add onions, leeks and garlic and cook for 7 minutes until onions are translucent.
Add bell peppers, tomato sauce and tomatoes to beef mixture. Add italian seasoning, salt and pepper and stir. Cover and cook for at least 15 minutes. The longer it cooks the better it tastes as all the ingredients get a chance to melt into eachother :)
Cook rice according to directions on box. Typically 1 cup of water and 1 cup of rice. Bring water to a boil and add rice and cook 5 minutes on low covered (as long as using minute rice)
Top with cheese if you like and serve !with brown rice or pasta for non brown rice eaters. Enjoy!
