1 Yellow Onion, chopped
1/4 cup Pineapple chunks
1 Mango, fruit without refuse
1 Japanese Persimmons, juiced
1/4 cup Cashew Nuts, dry roasted halves
2 stalks Celery
3 tbsp Soy Sauce
1 tbsp Honey
1 tbsp Rice Wine Vinegar
2 tbsp Garlic, minced
1 1/2 lbs Pork Tenderloin
2 cups White Rice, long grain
Directions
Saute the onions in the persimmon juice for 2 minutes, then add soy sauce, rice wine vinegar, garlic and other fruit for another 4 minutes on medium heat.
Dice the pork and add it to the mixture, cooked until almost done (approximately 10 minutes), then add cayenne and honey.
Add the celery and cashews approximately 2-4 minutes before removing the dish from the pan.
