Ingredients

    Polenta, Organic (Fra'mani brand prepared), 1/2 c, 3 serving
    *Bob Evens Sweet Italian Sausage, 1 serving
    *Butterball Italian Sweet Sausage, 4 serving
    Parmesan Cheese, grated, .5 cup
    *Cut Leaf Spinach - Frozen, 1 cup
    *Extra Virgin Olive Oil, 3 tbsp
    Mushrooms, fresh, 1 cup, pieces or slices
    Eggplant, 1 cup (1" cubes)
    *Spaghetti Sauce, Bertoli Tomato & Basil, 1 cup

Directions

Cut polenta into rounds, about 12
place in baking dish over .25 cup spaghetti sauce
top with cooked eggplant then cooked mushrooms and spinach and top with cooked sausage then rest of spaghetti sauce

Bake for 30 mins at 350 degrees
