8 cups whole rolled oats
1 1/2 cups sliced almonds
1 1/2 cups firmly packed brown sugar
1/2 cup water
1 teaspoon salt
4 teaspoons vanilla extract
I love this granola plain but feel free to add in your favorite granola bits: dried fruit (cranberries, raisins, blueberries, cherries, etc.), coconut, or mini chocolate chips. Obviously, any add-ins will change the caloric count. :)
In a large mixing bowl combine oats and sliced almonds. Set aside.
In a 2qt microwave safe bowl, cook brown sugar and water for 5 minutes. Add salt and vanilla.
Pour vanilla sugar mixture over oats and almonds, stir well to combine.
Spread granola mixture over baking sheet sprayed with non-stick cooking spray. Bake for 45 - 60 minutes stirring every 15 minutes. Cool and enjoy!!
