Introduction

Ingredients

2/3 c. applesauce
1.5 c. brown sugar
1/4 cup dark molasses
2 cups yellow squash puree*
2 large eggs
1 teaspoon salt
3 teaspoons ground cinnamon
2 teaspoon apple pie spice
1 teaspoon ground ginger
1/2 teaspoon ground cloves
2 1/2 cups brown rice flour
1 teaspoon baking soda
1 teaspoon baking powder
2 cups steel cut oats, cooked
1 cup unsweetened flaked coconut
1 cup raisins
1 cup chopped walnuts
1/2 c. dried sweetened cranberries
Directions
Make oatmeal and squash puree first. Oatmeal can cook while you fix the rest of the ingredients.
Mix (with a mixer) applesauce, brown sugar, molasses, squash puree, eggs and spices. Blend in the brown rice flour. Add all the chunky foods together and mix with a wooden spoon. Drop spoonfuls of mix onto an ungreased cookie sheet. Bake for 350 degrees for 13-15 minutes.
