Introduction

This is a posh vegetable side dish- saffron doesn't come cheap! That being said, it adds an unmistakeable flavour! Roast in a large, shallow baking dish for maximum crispiness. Ingredients

    Saffron, 1 tsp
    Water, 50 ml, just boiled
    Cauliflower, raw, 1.25 head, cut into small florets
    Sultanas, 65 gram(s) (rehydrate by soaking in boiling water if too dry)
    Red onion, 1, thinly sliced
    Olive Oil, 3 tbsp
    Bay leaves, 2

Directions

Preheat oven to 400.

Put saffron in a small bowl and cover with water. Let sit while preparing other ingredients.

Combine cauliflower florets, sultanas, olive oil and bay leaves in a baking dish (wide and shallow is best... aim for a single layer). Mix well.

Pour saffron water over cauliflower mixture, and stir well. Cover baking dish with foil and bake for thirty minutes.

After thirty minutes, stir mixture, re-cover with foil and return to oven for another thirty minutes.

Remove bay leaves and serve.

Serving Size: Serves five as a side dish.
