Ingredients

    1 small leek, white and pale green parts
    1/2 TBS butter
    1 tsp salt
    1 tsp pepper
    6 oz black forest ham
    2 large eggs
    1/2 C fat free half and half
    1/4 C light sour cream
    1/4 C Light greek yogurt
    1/2 heaping cup of Jarlsburg light swiss cheese

Directions

Preheat oven to 400. Take pie crust out of freezer and let thaw for about 15 minutes. Prick bottom and sides of pie crust with a fork. Bake crust for about 10 minutes until slight golden brown; remove from oven and set aside. Reduce heat to 375.

Slice leek into bite size slices. Cube ham. Place butter in a saute pan and heat over medium high heat. Add leeks and lightly saute. Add ham. While that is sauteing, mix half and half, sour cream, yogurt, eggs, salt, pepper and 1/4 C of cheese in a mixing bowl. Remove leeks and ham from heat. Evenly spread ham and leek in the pie crust. Pour egg/cream/cheese mixture over the ham and leeks. Top with the remaining 1/4 C. of cheese. Place on center rack of 375 oven and bake for 28-33 minutes. Turn oven off and turn on broiler to brown cheese on top.
