Ingredients

2.5 lbs Carne Picada (sliced beef)
8 oz sliced fresh mushrooms
1 cup chopped, fresh onions
1 can sliced pineapple rings in natural juice
Approx. 1 cup sugar snap peas
1.5 c Cherry Dr. Pepper
1/4 C cornstarch
3 cups rice, cooked
Tips
Diet Dr. Pepper can be substituted for even fewer calories. A teaspoon or two of pineapple ice cream topping can also be added to sauce mix to increase sweetness, but it also increases calories!
Directions
Lightly spray frying pan with Canola Oil Spray. Cook beef and onion with garlic powder and ginger until beef is well done. (The carne is a very lean meat and rarely needs draining) Add carrots and cook with lid on, lightly steaming until tender-crisp. Add Snap peas and cook with lid on for an additional minute. Add mushrooms and cook with lid on for one more minute. While beef is cooking prepare sweet and sour sauce by mixing pineapple juice from can with the soda in a small sauce pan. Mix cornstarch with 1/4 cup of water. When liquid boils, add cornstarch to thicken. Cook rice according to package directions. Add sauce to cooked beef mixture and stir. Add sliced pineapples and stir until warmed. Serve over rice.
