Ingredients

    70 grams couscous(espresso cup)
    1 tbsp olive oil
    juice of 1 lemon
    5 sun dried tomatoes
    1 tbsp chopped onion
    40 grams gerkins in vinegar
    30 grams saltanas

Tips

I love this dish and its very easy and quick to do. Ring the changes by adding different picked veg(e.g. pedderdews, olives, onions) and dried fruit


Directions

Place couscous in a heat proof bowl and cover with boling water so the water is about a finger over the top of the couscous. Cover and allow to stand for 10 mins. In the meantime roughly chop the tomatoes,onion,and gerkins. Once all the water has been absorbed by the couscous add the olive oil and lemon juice and fluff the couscous with a fork. Add all the other ingredients.
