Introduction

Ingredients

    • 1 3/4 cups agave nectar
    • 1/2 cup almond original-flavor milk
    • 1/2 cup coconut oil (solid)
    • 6 tablespoons unsweetened cocoa powder
    • 1/2 cup natural peanut butter
    • 3.5 cups old fashioned oats
    • 1 tablespoon vanilla extract
    - 1/2 cup flaxseed meal
    - 1/2 cup coconut flour

Tips

This is not a low calorie dessert. This is high in fiber and protein, and is better suited for an afternoon snack, in my opinion. Also, the global goods brand agave nectar has been proven in human trials by a 3rd party research center to not cause blood sugar spikes. There is more information on the global goods website on the chemical breakdown of their agave nectar. just FYI for those who are wary of using agave nectar.

if these don't set, you can try popping them in the oven for a bit. (I'd guess around 5-10 minutes).


Directions

1. In a medium saucepan, combine nectar, milk, butter, vanilla, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, coconut flour, and flaxseed meal. spoon onto wax paper (i used an ice cream scoop, and got large-ish cookies). Let cool until hardened.

note: you MUST constantly stir this. If you count from the time it simmers till you take it off the stove, it'll be 2.5 minutes. Boiling time is VERY IMPORTANT (too short and the cookies won't set, too long and they'll be crumbly)

also, have all the additional ingredients ready when you turn on the stove. you don't have a lot of time to get everything mixed in.

Serving Size: makes about 20 medium sized cookies. 17 large-ish cookies. :D
