Introduction

I keep cooked Barley and Black Beans on hand so this was a throw together, easy meal, with little clean up. I keep cooked Barley and Black Beans on hand so this was a throw together, easy meal, with little clean up.

Ingredients

    1 T olive oil
    1/2 med onion
    2 celery stalks
    21 oz hamburger
    2 eggs
    1 c cooked barley
    1 c cooked black beans
    1/2 c italian dressing
    1 c seasoned bread crumbs
    10 T ketchup
    3 t mustard

Directions

Cook the onion and celery in the olive oil in an iron skillet. Add to lg bowl with all other ingredients EXCEPT
3 T ketchup and 1 t mustard to use as a glaze before baking. Mix well and return to iron skillet. Glaze top and bake for 45 mins at 325 degrees.
