Introduction

This is just a little something my grandma throws together with some stuff she has in the house! This is just a little something my grandma throws together with some stuff she has in the house!
Number of Servings: 6

Ingredients

    3 Zucchini (sliced into small cubes with skin on)
    3 Eggs
    1/2 Onion (chopped)
    2-3 cans of Del Monte tomato sauce (the small cans)
    3 Tbsp Pecorino Romano grated cheese
    2 Tbsp Olive Oil

Tips

Use 2 cans of Del Monte if you want it to be thicker and 3 cans if you would rather it have a more soupy consistency. We just make it with whatever is in the house and it comes out good soupy or not soupy.


Directions

Put oil, onions and zucchini in a pot and let them sautee until the onions are translucent. Then add tomato sauce, the eggs (crack the egg into the pot and then stir immediately to make it scrambled throughout the pot) and the grated cheese.
Let it cook for about 10-15 minutes. Salt and pepper to taste.
