Introduction

My version of mug cake with half the calories of the original recipe! My version of mug cake with half the calories of the original recipe!
Number of Servings: 1

Ingredients

    4 tbsp of Gluten Free Brown Rice Flour
    1 egg (can use egg substitute)
    1 tbsp of So Delicious Coconut Milk Creamer
    1 tbsp of oil (I use canola)
    1 tbsp of honey
    2 tbsp of water
    1 tsp of vanilla extract, gluten free


Tips

If needed, microwave a bit longer to make sure the mixture is cooked. The cake is very dense, not very sweet, but definitely satisfies your craving for something sweet.


Directions

In a bowl, mix egg, creamer, vanilla, water, honey and egg, blend well. Then mix in gf flour into mixture until well mixed. Spray the inside of a large mug with cooking spray, pour the cake mixture into mug. Microwave on high for 5 minutes. The cake will be dense.
