Fried rice is a standby "wing it" meal in our house. Pick a meat and some veggies and away we go. This recie uses quinoa instead of rice. Better flavor and better for you to. Number of Servings: 6

Ingredients

    1 Cup uncooked Quinoa
    2 Cups of water
    1-2 Chicken breast
    1 Zucchini, sliced
    1 Cup of Peas (Frozen)
    1 Carrot, sliced
    2 Large Eggs
    1 Tbl Olive oil

Tips

Just about and meat and veggie combo works for this and it's a pretty quick meal too.


Directions

Prepare 1 Cup of Quinoa with two Cups of water per package directions.

Fry Chicken in Olive oil.
Once chicken is browned and cooked through, add all of the vegetables. Continue to cook vegetables for 5 to 10 minutes until done.
Fry the eggs. I usually just clear a spot in the pan. Once eggs are cooked, add the finished quinoa and stir.

Serving Size: Makes 6 servings

    Very Good
    I had to alter it just slightly because I didn't have all of the veggie ingredients but it turned out very good. I also added some spices (ginger, cumin, paprika) - 5/2/17
