Introduction

Ingredients

    16 Oz Cauliflower, frozen
    1/2 C. Broccoli, frozen
    1/3 C. Onion, chopped
    1/3 C. Red Bell Pepper, chopped
    1 lbs Bacon, cooked and crumbled
    8 Oz. Cheddar Cheese
    4 OZ. Cream Cheese
    1/3 C. Sour Cream
    1/3 C. Soy Milk
    1/4 C. Butter, unsalted
    1 C. Kale, chopped
    2 Tbsp. Dried Parsley
    2 Tbsp. Garlic powder
    2 Tbsp. Garlic Salt
    2 C. Water

Directions

Cook cauliflower and broccoli in a large saucepan with 2 cups of water until very very soft.

Preheat oven to 375 degrees.

Drain any water that has not boiled out, add in cream cheese, butter, sour cream and soy milk. Mash up with a hand mixer (or do it manually) until well mixed.

Add in all other ingredients, but set aside about 1/2 c. of cheddar cheese. Mix well

Transfer into a medium baking dish, top with remaining cheese. place in oven and bake for about 10-15 minutes until cheese is melted and golden brown. Remove from oven and let set for 5 minutes. Enjoy!
