Introduction

I took a batch of VitaMuffin Golden Corn muffin mix and baked according to the package directions with the exception of adding a pint of blueberries I took a batch of VitaMuffin Golden Corn muffin mix and baked according to the package directions with the exception of adding a pint of blueberries

Ingredients

    -1 package VitaMuffin Golden Corn Muffin Mix
    -3 large egg whites
    -1.25 cup water
    -1 pint blueberries (I buy them fresh then freeze them, and add them frozen directly into the baking mix so the blueberries will not turn the batter funny colors)

Tips

I used to work in a bakery and to make sure the blueberries do not "stain" the batter a reddish purple color I found that adding frozen blueberries to the mix does not effect the cooking time and the batter stays a ice golden corn color.


Directions

Preheat oven to 375 degrees farenheight
Prepare Vita Muffin Mix according to package directions
Take blueberries out of the freezer and add them to the mix
Scoop into muffin tins lined with paper
Bake at 375 Farenheight for 23-25minutes

Serving Size: Makes 17 full size muffins
