Introduction
I wanted to make pancakes using Quinoa Flour and not having to make regular Quinoa. I wanted to make pancakes using Quinoa Flour and not having to make regular Quinoa.Number of Servings: 3
Ingredients

1 cup of Quinoa Flour
1 Egg
2 tsp Brown Sugar - packed
1 tsp baking Powder
1/2 tsp baking soda
1/2 cup of non sweetened Apple Sauce
1 tsp Pure Vanilla (Vanilla extract can be used as well)
3/4 cup of Unsweetened Almond Milk
Tips
I kind of eye ball when cooking. If your mixture is too thin for you, you want simply add more flour 1 tablespoon at a time. Keep in mind that the more thick it is then it will take longer to cook the middle. If it is too thick for you then simply add more almond milk.
If u want to add some antioxidents, add 1/2 of either fresh or frozen blueberries
Directions
Put the flour in a bowl and add baking powder. Mix together. Crack egg in a small container and beat with fork until yolk is mixed with the whites then mix in vanilla. Add to flour mixture. Add in rest of ingredients and mix. If too thick then add more almond milk until is at preferred texture. Spray frying pan with cooking spray and then preheat on medium heat. Pour in mixture and cook for about 4 minutes then flip over and press down lightly on pancake to even pancake. Cook for approx another 3 or 4 minutes until cooked. Serve with topping of choice.
