Introduction

Ingredients

    1 bunch of broccoli (cut and trim stocks)
    1 yellow onion - diced
    1 clove of garlic - crush
    1 Tbls olive oil
    1 Tblsp curry power (any blend)
    2 cans of Swanson (low sodium) chicken broth
    1/2 tsp kosher salt
    1/4 -1/2 tsp cayenne pepper (depends on preference)

Tips

Look for bunches of broccoli with long stems.


Directions

heat up olive oil, put in diced onion and cut up stocks. Once onions start to turn in golden put in crushed garlic. Saute less than 30 seconds. Put in salt, cayenne and curry powder. Saute for 1 minute. Then put in cut up broccoli head, mix until heads have some of the curry mixture on them, then put in chicken stock. Bring to a boil, then turn down to simmer. Cook for 15 minutes. Ladle in batches into blender, becareful not to over fill blender as it will erupt out of the top of the lid.
Once all blended, put back on stove to bring temperture back up. Check for salt. Then ladle into bowls.

Serving Size: makes 4 - 1 cup servings
