Ingredients

Leeks, 1 cup
Sweet Corn, Fresh, 1 cup
Sweet potato, 2 cup, cubes
No sodium chicken broth, 3 cup
Milk, nonfat, 1 cup
Scallops, raw, 425 grams
Garlic, 2 clove (remove)
Thyme, a few fresh sprigs
Pepper
Directions
Bring 3 cups of broth to a boil
Add in leeks, garlic and sweet potato and thyme
When sweet potato is soft, add in bag of baby scallops
Puree 1 cup of corn with 1/2 cup of water, add to soup
Add one cup of milk
Simmer for 10 minutes
