Ingredients

4 Eggs
1.5 cups sugar
.75 cup oil
.50 cup applesauce
1.75 cups canned pumpkin
.50 cup wheat germ
.50 cup skim milk powder
3 cups flour
1 Tbsp cinnamon
1 tsp ginger
1 tsp nutmeg
.5 tsp cloves
1 tsp salt
2 tsp Baking soda
Tips
The original called for 2 cups of sugar and 1.25 cups of oil. This version tastes just as good!
Directions
Beat eggs. Add sugar, oil and pumpkin, beat thoroughly. Add dry ingredients. Mix until smooth. Grease muffin tins and fill 2/3 full. Bake at 375 F for 10 minutes in mini muffin tins.
You can also make these full size (about 3=full size muffin), bake for 15-20 minutes.
