Ingredients

    2 pounds pork tenderloin, trimmed
    1 1/2 teaspoons five-spice powder
    1 tablespoon vegetable oil
    3/4 cup apple juice
    1/3 cup dry white wine (or use white grape juice with a
    splash of cider vinegar)
    2 tablespoons low sodium soy sauce
    3 tablespoons cornstarch
    2 tablespoons cold water

Tips

LC: Baked Hubbard squash and steamed broccoli.
Regular: Add steamed red skinned potatoes.
Kosher: Instead of pork, use boneless skinless chicken breast meat.
Gluten Free: Make sure soy sauce is gluten free.


Directions

Rub pork tenderloin with five-spice powder. Heat the oil in a skillet over medium-high heat; sear pork tenderloin on all sides; transfer to a slow cooker. In a small bowl, combine apple juice, wine (or juice/vinegar) and soy sauce; pour over pork tenderloin. Cover and cook on LOW for 6 to 8 hours. Remove tenderloin from slow cooker and keep warm.
In a medium bowl, combine cornstarch and cold water; add enough liquid from slow cooker plus enough water (if necessary) to make 2 cups; return mixture to slow cooker and cook on HIGH until thick and bubbly.
