Ingredients

    *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" (remove)
    Spinach, fresh, 1 bunch (remove)
    Onions, raw, 1 slice, medium (1/8" thick) (preferrably a sweet onion) (remove)
    Carrots, raw, 1 strip, medium (remove)
    Olive Oil, 1 tbsp (remove)

Directions

Makes approximately 4 1 cup servings.
Cut vegetables
put 1 tbsp olive oil in sautee pan
quickly sautee red pepper and carrots
add onions
add spinach
vegetables should still be firm once cooked
Serve as a side course or snack.
