Ingredients

    Green peppers, sliced
    Yellow or Orange peppers, sliced
    Mushrooms, sliced
    Onions, sliced
    Black Beans, canned, drained and rinsed
    Kale, chopped


Tips

Add plain greek yogurt instead of sour cream. Serve with salsa, avocado, and lettuce, and lowfat cheese shreds.


Directions

Saute peppers and onions together for 2-3 minutes. Add mushrooms and saute an additional 4-5 minutes. Add kale and black beans and continue to saute until all veggies are cooked through, but firm. Continue to season throughout, adding chili powder after each vegetable is added to the mix.
