Ingredients

1 pkg of Hot Turkey Italian Sausage
4 Large Potatoes
8 cups of Unsalted Chicken Broth
1 large bag of pre washed Kale
5 cloves minced garlic
1 lagre onion, Sliced
Salt and Pepper to taste
Hot sauce to taste
Directions
Pour broth in large pot. Wash and Slice thin 3 potatoes and add to broth. Wash and grate last potatoe into pot. Bring to boil on High heat. Turn to Medium after it has boiled for 5 minutes.
While bringing to a boil, remove sausage from casing and brown in frying pan with cooking spray and onions. Add garilc when sausage is almost complete. Onions should be cooked thru and sausage done. Set to side.
After potatoes have boiled for 5 minutes, add sausage, onions and garlic to pot. Reduce heat to Med and let simmer, covered for 30 minutes, stirring occasionally.
Test potatoes. If done, slowly add kale to pot a handful at a time. It will wilt down and you can continute to add. Let simmer an additional 15 minutes.
Salt, pepper, and hot sauce to taste.
Also good with a sprinkling of Parmasean Cheese (not in nutrition totals.
