Ingredients

    1/2 c zucchini sliced
    1/2 c roasted red peppers
    1/2 c mushrooms
    1/2 c marinated artichoke hearts
    3/4 c ricotta cheese
    1 c part skim mozzarella cheese
    1 whole wheat pizza crust dough
    2 tbs olive oil

Directions

thaw pizza crust, spread dough on pizza pan brush with olive oil-prebake crust for 5 min, saute veggies to desired tenderness, spread ricotta cheese on dough add veggies top with cheese, bake at 400 for 20 min or until bubbly

Serving Size: makes 8 slices
