Ingredients

    Pre-made Oreo Pie Crust
    1 tub cool whip free
    26 Edy's Dibs Mint pieces (or any other flavor)
    Sugar Free Fat Free Instant Vanilla Pudding (large packet)
    3/4 cup of Non-Fat Milk
    4 Andes Mints (chopped)
    1/4 tsp of Peppermint Extract (optional)

Directions

Mix pudding w/non-fat milk until it is all absorbed. Fold entire container of cool whip into the mix. Add peppermint extract if desired. Mix well but do not blend it will make the cool whip too soft to freeze. Place 26 of the Edy's Mint pieces in the bottom of a pre-made oreo pie crust. Pour/scoop the cool whip mixture on top of the ice cream pieces and evenly spread through the pan. Sprinkle the top w/the Andes chopped mints. Cover and freeze. Serve frozen.

Pie can be cut into 8's or 16's.

**An alternative is to take invidual cup cake baking cups and place a vanilla waffer in the bottom (will reduce calories and helps w/portion control) 2 ice cream pieces and then cool whip mixture. Divide evenly. Freeze and serve frozen.
