Introduction
Craving something vegan, decadent, AND easy? Me too! This "pudding" is perfect for an after-dinner dessert or a fun chocolate banana pudding layered dish to serve at a brunch or party. Ingredients

1 block soft tofu
4 dates, pitted and chopped
3 tbsp palm sugar (or other sweetener of choice)
1 cup unsweetened coconut milk
5 tbsp unsweetened cocoa powder
Tips
The possibilities are endless. I also have added chopped frozen cherries (non-sweetened), strawberries, blueberries, etc. {nutritional info not included above}. I am thinking of taking this to a baby shower layered with banana slices and some vegan vanilla wafer-type cookies.
Directions
Cut tofu into cubes and pit and cut up dates. Pour coconut milk into blender or food processor, then add tofu. Pulse a few times to make sure that the tofu and coconut milk are mixing well, then add cocoa powder, palm sugar and dates. Blend well. (You may want to add additional palm sugar, agave nectar, or other sweeteners if you want something that tastes more milk-chocolate than dark-chocolate.) Transfer to a bowl and refrigerate or freeze if desired, or serve immediately to excited friends, family, or your mouth. :) YUM!
