Ingredients

1 1/2 pounds of boneless skinless chicken breast, cubed
3 tbs butter
1/2 cup onion, chopped
2 cloves garlic, minced
1 can great northern beans, drained and rinsed
2 cans cream style corn
2 cups half and half
1 can chicken broth
2 cans Rotel tomatoes
2 cups Mexican type cheese, shredded
Cilantro, 1 tbsp dried
Cumin, 1 tsp
Tips
I use one hot and one regular rotel tomatoes, to add heat and spice. Used fat free broth, half and half, and low fat cheese to lessen calories. Very tasty soup, has a wonderful flavor.
Directions
Brown chicken, garlic and onion in butter until chicken is no longer pink. Add cumin and broth, and bring to boil. Cover and simmer for five minutes. Add remaining ingredients and simmer for 1 1/2 hours, to meld flavors together. Can be served over tortilla chips.
