Introduction

What a revelation to find that I could create my own version of "Spaghetti-O's" that is just as fun for the kids and WAY HEALTHIER!

Using "Low Sodium" ingredients allows you to control the salt.

Adding about a tablespoon of sugar helps mellow-out the acid in the vegetable juice.

Ingredients

    1 48 oz. Bottle Low Sodium V8 Vegetable Juice
    1 14.5 oz. can Low Sodium Petit Diced Tomatoes (with Garlic & Onion if preferred)
    1/2 box (about 8 oz.) Whole Grain Piccolini Pasta (choose your favorite shape!)
    1 Bay leaf - whole
    1 Tbsp Sugar
    Oregano, Basil, Parsley, Salt & Pepper
    Grated parmesan

Tips

Substitute any small soup (piccolini) pasta you would like. My kids also enjoy shells, wagon wheels and alphabets!


Directions

1) Pour V8 juice and tomatoes into large soup pot and bring to a boil.
2) Add pasta and boil for about 2 minutes stirring continuously to prevent sticking. Drop temperature to simmer and add herbs and season to taste.
3) Allow to simmer about 10 minutes or until pasta is tender stirring often.
4) Serve with grated parmesan.

Serving Size: Makes about 7 one-cup servings.
