Introduction

Ingredients

    1 medium cabbage, shredded
    1 bell pepper, sliced into thin strips
    1 cup sliced red onion
    4 medium carrots, sliced into rounds
    1/3 cup granulated sugar
    1/3 cup canola oil
    1/2 cup cider or rice vinegar
    1 tsp salt
    1 tsp celery seed
    1 tsp mustard seed


Tips

To save time you can use a bag of shredded cabbage from the grocery store.


Directions

Layer 1/3 of the cabbage, bell pepper, onion, and carrots into a large bowl. Sprinkle 1/2 of the sugar. Repeat for second layer. For third layer top with remaining cabbage, pepper, onions, and carrots. In a separate small bowl combine the oil, vinegar, salt, and seeds. Stir until well blended, then pour over the cabbage mixture. Cover tighly and refrigerate overnight or at least 4 hours. Do not stir until just ready to serve.

Serving Size: Makes about 10 1-cup servings.
