Introduction

This is a low carb supper soup. Not low fat, purposefully. Fats are allowed on this eating plan. Serving size is about 2 cups. I would have put more cauliflower in the soup if I had more and I would have used chicken broth if I had that. But this was made with what I had. Ingredients

    1 pat of butter
    8 oz bulk pork sausage (or Italian sausage if preferred)
    1/3 cup chopped onion
    1 clove garlic
    t/2 tsp chili flakes or more as desired
    2 cups water
    1 package frozen spinach
    cooked or frozen cauliflower (I only had about a cup)
    1 Tbl butter
    1/4 c heavy cream (or whatever creamer you want)

Tips

This is not a low calorie recipe, nor low fat. This is meant for a low carb eating plan that allows for fats. No I didn't drain the fat from the sausage. There really wasn't much fat from the sausage that I buy at a local market.


Directions

Brown sausage, onion and garlic with a pat of butter in medium saucepan. Add 2 cups of water or broth if you would like (not included in nutritional information). Bring to boil. Add frozen spinach, cooked or frozen cauliflower, chili flakes and Mrs. Dash. Let simmer for several minutes. Add the other tablespoon of butter and the cream. Allow that to just warm through. Enjoy.

    I probably would have used chicken broth if I had had it in the cupboard but just used what I had. Glad that you enjoyed it.
