Ingredients

1 15 oz can chickpeas
4 Tbsp soy-free Vegenaise
1 stalk bok Choy, chopped finely
1/2 of a small carrot, grated (about 1/4 cup)
onion powder to taste
garlic salt to taste
paprika to taste
Tips
Add other items to sandwiches or wraps as desired... but take into account the added calories.
(for example, vegan cheese, avocado, tomato...)
Directions
Mash chickpeas lightly with fork, add vegenaise, chopped bok choy, grated carrot. Mix well with fork. Add onion powder, garlic salt, and paprika to taste. Add other spices as desired.
Spread on bread or fill a pita for a sandwich, roll in a tortilla or a collard leaf for a wrap.
