    12 large eggs
    4 ounces shredded cheddar cheese
    2 TBSP real bacon bits
    12 slices honey ham
    12 english muffins


These can be made ahead and frozen wrapped in foil

I like to break the yolk and swirl it a bit to break it up. You could also whisk the eggs with a bit of milk.

I also like to use a bit of all-purpose seasoning instead of salt & pepper. I like Red Robin seasoning a lot.


Preheat oven to 350. In a 12-cup muffin tin, spray a bit of nonstick spray and crack one egg in each hole. Salt and pepper as desired and sprinkle with bacon bits. Bake for 20 minutes or until egg is set. While egg is baking, split muffins and toast them. When eggs are done, sprinkle some cheese on a muffin bottom, top it with the egg, a slice of ham, and the top of the muffin.
