Ingredients

2 tsp Canola Oil
2 Garlic Cloves, Crushed
1 Cup Onion, Chopped
1 Celery Stick, Chopped
1 Red Bell Pepper, Chopped
1 Lb Extra-Lean Ground Beef
1 28 oz can Diced Tomatoes (with green chilis, if available)
2 Tbs Tomato Paste
1 15 oz can Dark Red Kidney Beans, drained
1 15 oz can Pinto Beans, drained
2 Tbs Chili Powder
Tips
Make sure not to have the heat too high. If you find that you have cooked off all of the liquid after a couple minutes add 1.5 cups of water.
Directions
Heat Oil in a Large Dutch Oven. Add Garlic, Onion, Celery, and Pepper, and Saute gently for 2-3 minutes. add ground beef and cook until meat is browned.
Add Tomatoes, tomato paste, beans, and chili powder. Stir Well. Simmer for 25-30 minutes, stirring occasionally.
