Introduction

Ingredients

Venison 2.5 lbs, cubed
1/4 cup flour
1/2 tsp salt
3 TBS Olive Oil
3 TBS Worcestershire Sauce
3 Medium Carrots -cut to desired size
3 Stalks of Celery -cut to desired size (including the leaves -adds a lot of flavor)
1 medium onion yellow or white (I use white) -diced
3 Cups diced red potato (I leave skin on)
6 oz package of fresh mushrooms (pieces, or chopped)
1/2 cup red wine
1 TBS dried parsley
1 1/2 tsp black pepper
2 TBS minced garlic
1 pkt Lipton Onion Soup Mix (if wish to omit, see directions under "tips" section for an alternative)
2 cups water
Tips
To make a lower sodium "onion soup mix" -combine 1/4 dried onion flakes, 2 tbs low-sodium beef bouillion granules, 1/4 tsp onion powder, 1/4 tsp dried parsley, 1/8 tsp celery seed, 1/8 tsp paprika, 1/8 tsp pepper. Makes equivalent of 1 (1 oz) packet of soup mix.
Directions
1. Combine flour and salt in a large zip lock bag and combine. Add cubed meat and shake to coat thoroughly.
2. Heat oil in skillet over medium high heat and add beef. While browning add worcestershire sauce and evenly brown meat (doesn't have to cook through!!). Put meat in crock pot with potatoes, onion, garlic, carrots and celery. DO NOT CLEAN PAN.
3. Put pan back on heat and add red wine to de-glaze. Toss in mushrooms and cook just until the mushrooms start to soften (not all the way through). Dump entire contents of pan into crock pot.
4. Combine water with onion soup mix (or substitute mentioned in "tips") and dump into crock pot. Sprinkle with pepper and parsley, stir to combine.
5. Turn crock pot on low and let cook all day (7-8 hours) or until meat is tender.
Dish up and enjoy! Makes 8 servings. (It's hard to guess how big the portions are exactly -because of how much water is cooked off. I portion mine out for dinner and then into left over containers for freezing.)
Optional -if you want a thicker stew, combine 3 tbs cornstarch with 1/4 cup warm water and then add to stew at the END OF COOKING!! Let sit with the top off (and the crock pot still on low) for about 15 minutes to allow for thickening. This is not included in the nutritional value.
