Ingredients

    1/2 cup brown sugar
    1 1/2 cup Hodgson Mill Oat Bran Cereal
    1 1/2 Unbleached organic flour
    1 1/2 tsp. baking powder
    1 1/2 tsp. baking soda
    1/2 salt
    4 egg whites
    1 cup applesauce
    4 tbsp. vegetable oil

Directions

Preheat oven to 400. Line 15 muffin tins w/liners and grease liners.
Blend together dry ingredients.
Add eggs, applesauce, and vegetable oil in seperate bowl. Mix well.
Add liquid ingredients to dry ingredients and stir. Let stand for 10 min. before baking.
Bake for 15 min. or until golden brown.
