Ingredients

However much chicken you want (it's not calculated in to the recipe)
2 Tbsp olive oil
1 tsp salt
1 lg onion, chopped
5 cloves minced garlic
1 cup chopped carrot
4 med celery
1/2 tsp ground ginger
1 tsp paprika
1 1/2 tsp cumin
1 tsp oregano
1/2 tsp cayenne pepper
1/2 tsp tumeric
3c chicken broth
2 cup canned, diced tomatoes
3c canned, drained chickpeas
4c sliced zuccini (thick)
2 Tbsp lime juice
Directions
Brown chicken in the olive oil in the skillet. Remove chicken from the skillet and set aside.
In the same skillet:
Saute onion, garlic, carrots, and celery in the skillet. When tender add spices and stir fry for about 1 min.
Add tomatoes and broth. Return chicken to pan, reduce heat to low and simmer 10 min.
Add chickpeas and zucchini to pan and simmer, covered for 15 min.
Stir in lemon juice and serve.
