Extra Sharp Cheddar - 1 cup

Tips
My kids like to add extra cheese on top, but I like to omit that to make the dish a little healthier
Directions
Blend spinach and chicken sausage in a food processor until chopped well. Shred the cheese and mix it all into a large bowl with the eggs. Spray a mini muffin pan with olive oil and fill each cup 3/4 of the way. Bake on 350 degrees for 30 minutes or until done.
