Ingredients

1 frozen deep dish pie crust
6 pieces turkey bacon cooked crispy and crumbled
1 tbsp olive oil
1 sweet onion - diced
1 cup sliced mushrooms
1 package frozen spinach thawed and squeezed dry
2 tbsp 2% milk
4 large eggs
1 tsp fresh ground pepper
(optional) red pepper flakes
1.5 cups shredded mozzarella cheese
Directions
1. preheat oven to 350 degrees
2. bake crust for 15 min
3. saute onions in olive oil until tender
4. add mushrooms and cook until tender and slightly caramelized
5. In a large bowl combine bacon, spinach, onions & mushrooms and 1/2 cup mozzarella cheese
6. In a separate bowl beat eggs, milk & pepper
7. Pour egg mixture into the vegetable mixture
8. Combine well and pour into pre-baked pie crust
9. Sprinkle with remaining 1 cup of cheese
10. Reduce oven temp to 325 degrees F
11. Bake for 30 min or until no longer jiggly
12. For a browned cheese broil until light brown
13. Let sit for 5 minutes before serving
