Introduction

Low-fat, high-protein and hearty upgrade of the classic chicken noodle soup. Low-fat, high-protein and hearty upgrade of the classic chicken noodle soup.
Number of Servings: 12

Ingredients

    1.5gal. water
    3 boneless, skinless chicken breasts
    4c. (dry) whole wheat rotini
    3c. (dry) black beans
    Chicken seasoning (I use Marcel)
    2 cans diced, stewed or whole tomatoes.
    1 can peas
    1 can carrots
    1 can corn
    1.5c. chopped red onion
    Black pepper (to taste)

Directions

Bring water, seasonings, pepper and onion to hard boil. Add whole chicken breasts and black beans. Cook until chicken is done, beans are tender, and stock is reduced by a third. Remove and shred chicken, then add. Add canned vegetables and pasta. Cook until pasta is tender.
